A Busy Chick’s Chili

Watch out Rachel Ray! Move over Martha Stewart! This lady made her very own delicious chili in under 30 minutes…on her first try ever seriously cooking something that had more than 4 ingredients! I knew I was always gifted when it came to baking boxed muffins, but the chili success brings my talents to a new level.

Since I like to help others, I am sharing the secret chili recipe. It is super easy to make and very quick, which comes in handy for the majority of us who have busy days. The recipe below yields about 6 servings.

Ingredients

1 pound ground beef or turkey

1 cup chopped sweet yellow onion

1 cup chopped green pepper

2 cans diced tomatoes

3/4 can kidney beans, drained + 3/4 can pinto beans, drained + 3/4 can black beans, drained

1 can chili beans, undrained

3/4 jalapeño pepper, chopped & seeds removed

1 1/2 teaspoons chili powder + 1/2 teaspoon cumin+ 1/2 teaspoon salt + 1/4 teaspoon cayenne pepper

Directions:

1) Brown ground meat and drain.

2) Add all other ingredients to the cooked meat in a large pot, bring to a boil. Then reduce heat and simmer for 20 minutes.

3) Serve with a dollop of sour cream and sprinkled cheddar cheese on top.

It pairs delightfully with a nice Chardonnay (or apple juice if you’re under 21…).
