I love carbs. The only thing I love more than carbs is sugar…(hope you get the humor here). So when I find a recipe that allows me to have carbs while still eating healthy, I have to try it. The recipe below from Real Simple magazine was a complete success and astonishingly easy to toss together. If I can do it, you can too, and I recommend you do!

*The only tweak I suggest making is adding approximately a tablespoon or two of Italian dressing to the noodles after they are drained to give them a coating. Otherwise, they are incredibly dry and stick together, as the recipe doesn’t call for any type of sauce.

I may have added more spinach intentionally, good catch! 🙂 Since my brother is in, I’m “off” until Tuesday of next week. 🙂 I have still been trying to eat “healthy,” but we are enjoying his time here which means going out for dinners and trying desserts. Have to enjoy the these moments though, right? I don’t get them every day. Go you with gym today! Isn’t it crazy that we know we are going to regret eat something…but we still do it and then get upset? I do the exact same thing. It makes no sense.
I figured as much, pasta in moderation and lots of veg… that’s a winning combination 🙂 Haha everyone’s allowed a vacation from no-treats-eating… especially if family is in town. I can’t go to the gym tomorrow at lunch so I’m gonna have to work extra hard to force myself to go after work. Won’t be easy on a Friday afternoon! I hope you enjoy your time with your baby brother 🙂

Haha oh well, he’s only there for a short time, so enjoy it. Today I had a doctor’s appointment so I couldn’t go at lunch and tonight I am doing work for some job interviews and applications… so tomorrow for sure! But a tasty and healthy dinner of sugar peas, chick peas and chicken and (cough cough) chocolate frozen yogourt…. 😉

I used the leftover feta and spinach for salads, delicious!
Looks easy and I’m sure you could substitute the shrimp for almost anything, like chicken, or even salmon for example. I’ll give it a try, I’m always looking for something fast and easy!
