Mama’s Meatloaf

For the longest time, I have called my poor mother every.single.time I make meatloaf to get her recipe. After calling her today for the 437th time, I decided I’m officially writing it down and sharing it with you!

I don’t know about you, but I love me some good meatloaf. I hate to brag, but nobody makes meatloaf like my Mama! So without further adieu…

Mama's MeatloafIngredients:

  • 1 pound ground beef (lowest amount of fat)
  • 1 pound ground pork (lowest amount of fat)
  • 1 can Cream of Mushroom soup
  • 1 package of French Onion Soup mix (Lipton’s, according to Mom)
  • 2 eggs
  • Breadcrumbs…enough to make it it not stick to a wall, should you throw a lump at it (also according to mom)

  1. Preheat oven to 350 degrees.
  2. Grease a meatloaf pan with Pam.
  3. Mix the ground beef and pork together with eggs, can of Cream of Mushroom soup, and package of French Onion Soup mix. Add breadcrumbs in small amounts and mix until the consistency is sticky enough to make a meatball, but not sticky enough to stick to a wall if you throw it at it (this is verbatim, per Mom).
  4. Put meatloaf in pan and cook for 1 hour 20 minutes.
  5. Drizzle ketchup across the top prior to serving if desired.

This meatloaf is amazing, just like my Mom….aweeeee!!!! Enjoy!

I made this meat loaf last night! And the night before that I made your chicken wrapped in prosciutto! To me, meatloaf is such an American thing, I always read about it in American books and see it in American movies. Here in Australia I’ve never seen it, let alone eat it. But I’ve always wanted to try it and this was yum! So you can tell your Mum that her recipe has now been made in Sydney Australia!

I like the sound and probably the taste of your mother’s meatloaf! I like Jenn H’s more traditional one, which I do hamburger, 3 slices of whole wheat bread crumbled up, a T. of milk, 2 eggs, ketchup and worchestershire sauce.(Mixed well in bowl and then put in pan and add bbq and ketchup with minced onions on top!)

This post made me laugh so hard cuz I did the same thing with my mom ( until she passed) with her sticky buns… now I do the same thing with my sister and I have it written down but still call her, and she just informed me that she loves the call!

Very different recipe than I’ve ever seen or tried, but it looks & sounds really good! I’d of course have to argue that my mom’s is better…LOL! Sad thing is though, I don’t use her recipe…I have my own recipe & it’s pretty amazing too! Meatloaf just rocks and it’s good just about any way you make it! I’m really surprised you don’t cook it with the ketchup on it though. Not sure if it would work the same in a “meatloaf pan”…which I call a bread pan. I just cook mine in the middle of a 9×13 dish formed in the shape of a meatloaf & then top it with ketchup & bbq sauce and then put it in to bake.

Because of the cream of mushroom soup, it’s already soft. Cooking with ketchup would make it soggy. It doesn’t burn on the top or crisp like most meat loafs do. Bread pan, meatloaf pan. You say potato. I say potato.

ooooohh yah! I’ll be over!! (kidding of course). Never tried meatloaf with pork in it, the flavor must be changed up a bit with it in there, sounds delish!
